Historical price analysis suggests Sauternes and Barsac represent the best value fine wines in Bordeaux today by 500%!</p>
<p>That&#8217;s a bold claim but one I think I can evidence.  My card index records cover every single wine I have ever bought during my 30 years living and working as a negociant in Bordeaux.  I have taken a long hard look at the records recently and discovered some fascinating trends.</p>
<p>The prices of two fantasy mixed cases over time support my claim that Sauternes is amazing value today compared to the red wines of Bordeaux.</p>
<p>My fantasy red wine case includes a bottle each (bought at chateau opening prices) of First Growths Lafite-Rothschild and Mouton-Rothschild; Second Growths Cos d&#8217;Estournel, Ducru-Beaucaillou and Leoville-Barton; Third Growths Calon Segur and d&#8217;Issan; Fifth Growths Lynch Bages and Pontet-Canet; a Premier Grand Cru St Emilion from Pavie and, finally, some Grand Cru Pessac-Leognan from Haut Bailly and Pape Clement.</p>
<p>In the Sauternes and Barsac case I have chosen d&#8217;Arche, Climens, Doisy Daene, Filhot, Guiraud, de Malle, Nairac, de Rayne Vigneau, Rieussec, Sigalas Rabaud, Suduiraut and La Tour Blanche.  All of these wines are First or Second Growths in the 1855 Classification.</p>
<p>The figures below are the average bottle prices for the two cases for selected vintages between 1983 (my first Sauternes vintage) and last year. All prices pre-1992 are converted from the old French Franc to Euros at the changeover rate of 6.56.</p>

<p>Throughout the 1980s and most of the 1990s Sauternes prices roughly kept pace with those of the red wines.  The 2000 vintage, however, changed the game and prices for the reds soared.  Sauternes missed out on this step change with an average vintage and a pattern was set.  Even when vintages were superb for both the reds and Sauternes in 2005 and 2009 all the speculation centred on the red wines.</p>
<p>So today our fantasy case of Sauternes costs us much less than our red wine case than it did back in 1983.  The 1990 and 2009 vintages (98 point vintages for both Sauternes and red wines) are particularly interesting to compare with our Sauternes case being slightly more expensive in 1990 but five times cheaper in 2009.</p>
<p>Put another way the conclusion is that Sauternes and Barsac are the best value fine wines in Bordeaux by 500%!</p>

As for blue cheeses, Roquefort and Sauternes is a classic pairing, Stilton and tawny port compliment one another, and for blue cheese in general, Malmsey Madeira is usually a good wine to choose. If you&#8217;re looking for a match for natural rind goat&#8217;s cheese, Sancerre or Soave are both appropriate pairings. For white, immature Brie or Camembert, the best choices are either a high quality Chardonnay or white Rhone, and for mature versions of these popular cheeses, red wine is more appropriate , a young Syrah, Grenache, or St-Emilion. If you&#8217;re serving a rindless fresh cheese, like cream cheese or mozzarella, then a simple Bordeaux blanc, white Rhone, or young Beaujolais are all excellent choices.</p>
<p>Cheese is complicated, but Christmas dinner&#8211;turkey, gravy and all the trimmings&#8211;is simple. IMHO, there are 2 wines which are perfect pairings for a traditional Christmas dinner: high-quality Burgundy or vintage Veuve Clicquot rose Champagne. Neither of them is cheap of course, but after all, Christmas is not a time to pinch pennies . That 2nd, quite specific recommendation is one I got from Ed McCarthy&#8217;s excellent book, &#8216;Champagne For Dummies.&#8217; I followed his advice and was amazed at just how nicely the pairing worked. And fortunately, as vintage rose Champagnes go, Veuve Clicquot is moderately priced.</p>
<p>Well then, why don&#8217;t we take a look at which wines pair well with less conventional dishes? As I alluded to in the introduction, it has become commonplace to partake of a variety of ethnic cuisines and dishes. If you&#8217;re serving sushi, or other Japanese food, I advise following the old adage of serving a wine from the same locale as the cuisine. Koshu, a white wine made from the eponymous Japanese grape which shares many characteristics with Sauvignon Blanc, is a great compliment to sushi.</p>
<p>A wine that pairs really well with Korean barbecue is a potent Californian Petite Syrah. Korean barbecue is a favorite treat with my family, and we generally drink a bottle of Eos Estate Reserve Petite Syrah with it.</p>
<p>For Thai cuisine, if the dominant flavors you&#8217;re attempting to pair with are lemon grass and ginger, then what you should pour is a pungent new world Sauvignon Blanc (preferably from New Zealand), or Riesling&#8211;either Australian or a German Spatlese. For dishes that contain coconut milk, Australian Chardonnay or Verdelho, Alsace Pinot Blanc or Gewurztraminer, or even non-vintage Champagne or Cava, Spain&#8217;s sparkling wine, are all great selections.</p>
<p>If you&#8217;re having Indian curry, try a medium-sweet white served quite cold, for example, South African Chenin Blanc, Alsace Pinot Blanc, Cava or non-vintage Champagne. It is also doable to go the other route and emphasize the curry&#8217;s spiciness with a highly tannic red such as Barolo or Barbaresco, or a full-bodied Chateauneuf-du-Pape or Amarone. <p>I say that because, first of all, the famous wine known as &#8220;Burgundy&#8221; comes from this appellation. It&#8217;s vinified from 100% Pinot Noir grapes and I feel sure that you&#8217;ll come across very argument from most wine lovers that a topflight Burgundy is the finest expression of this temperamental varietal  anywhere in the world, and, arguably, the very best red wine in the world. <p>The second reason I believe that Burgundy is the best wine-producing region anywhere is their white wines, the two most celebrated of which are Chablis and Montrachet. White Burgundies are normally called &#8220;white Burgundy,&#8221; and for the most part vinified from 100% Chardonnay grapes. Chardonnay is unquestionably the most popular white wine grape in the world and, according to most wine experts, realizes its finest expression in Burgundy. Montrachet in particular is considered by a large number of folks to be the finest dry white wine in the world. A re-tasting was held 30 years later, in which the original ten wines, which ranged in vintage from 1969 to 1973, were compared in a blind tasting one more time. This time the American wines won hands down, with the Napa Valley Cabs placing in the top five slots. So it could well be argued that the best reds in the world are made in Napa Valley.</p>
<p>In summary, I would say that, on the whole, the finest wine in the world comes from France. But that is in no way the final word on the subject; there are many more caveats which could be added to the two I brought up. The quality of wines has been getting better year by year in pretty much every wine-producing region around the world for at least the past twenty years. I personally regularly consume wines produced in France, Italy, Spain, Australia, New Zealand, The United States, Chili and Argentina. All of these nations make excellent wines, with a lot of them being quite reasonably priced. Also, there are tons of places I haven&#8217;t even talked about which also make interesting, high quality wines. It appears to me that the very best way to get a handle on the question, &#8220;Where does the best wine come from?&#8221; is to get stuck in and start tasting various wines from diverse areas of the world yourself. That may not be the shortest route to finding the answer, but it absolutely is the most satisfying.</p>
